What size flow regular can I use for this?

You would have to use a 15mm flow regulator reduced to attach to the tap flexes.

What size is the hole required to mount this tap?

Hello,
Thank you for your question.
I have taken a look through a number of our wall hung/counter top sinks.
The hole would normally be between 30 and 35mm
This is only to allow the 2 flex hoses and securing rod to fix down.
I think your 30mm won't be an issue.
